Owner of Château Tour St-Honoré since 1988, Serge Portal, of Londaise descent, has been a winemaker from father to son for five generations. The estate extends over different terroirs:

To the north, the Borrels valley, which brings a touch of minerality to the wines, thanks to the schist.
In the centre, Notre Dame des Maures, a hill of schist and clay, with an island of limestone soil, which brings an atypical touch to our wines for ageing.
In the south, the Haut and Bas Pansard, which with its clay soil produces warm red wines.
To the east, with its northern exposure, the whites have a nice freshness.

Most of the estate has a southern exposure facing the Iles d'Or.
Exceptional climatic conditions, a particular terroir, and increasingly elaborate and modern winemaking techniques give his rosé and white wines freshness and elegance, and his reds intensity and generosity.

Full of curiosity, Serge Portal plays with grape varieties like a child with colours, without preconceived ideas.
He introduces us to his "niche" wines such as Grenache gris, aged in acacia barrels, straw wines in white with muscat petit grains and in red with grenache, his sparkling wines including grenache gris in the ancestral method and the latest, MUSCAT'OH, for aperitif or dessert, sparkling, fresh, slightly sweet (natural sugar from the grapes), and very low in alcohol (8%vol).

The 2018 vintage, sees a first draft of wine without sulphite, on a single grape variety, the carignan.

The estate has been in organic farming since 2011 and in winemaking since 2013.

With the construction of a new cellar, and the arrival of son Olivier, a new era is about to begin for this family estate

On reservation for 6 to 10 people, from Monday to Saturday, in the evening.
